Easy Broccoli Cheddar Soup Recipe

This time of year (winter) especially, soup serves as an easy and inexpensive, but warming and enriching meal. There are thousands of different types of soup to make, with almost any ingredient available.
One of my favorites is Broccoli Cheddar Soup. I have tried it at many different restaurants, but prefer to make my own meals from scratch. This being one of them. Besides, knowing I myself put forth the effort needed to create something is satisfying in itself.
Below is my recipe for Broccoli Cheddar Soup. Mine is a bit thicker than what you would find at a restaurant. When cooking, I tend to add ingredients without measuring and then taste test often. This is a recipe that serves my creativity well. It can be changed easily to fit dietary needs.
What is needed (Ingredients)
This recipe will yield 8 servings, which is basically an entire pot of soup!
- 1/2 cup butter, melted
- 4 cups chicken stock
- 1/2 cup flour (white, all purpose)
- 1 onion, diced
- 3 cups half and half (creamer)
- 1 lb. fresh broccoli
- 1 tablespoon ground white pepper
- 1/5 tablespoon nutmeg
- 2 tablespoon garlic powder
- 1 lb. grated/shredded cheddar cheese
- dash of salt and pepper
How it is made (Directions)
- Make a roux. In a large pot on the stove - on medium heat - cook the melted butter and flour, while constantly stirring and slowly adding in the half and half. Do this for about 5 minutes.
- Add chicken stock. Simmer for about 15 minutes.
- Add the onion and continue to simmer for another 15-20 minutes.
- Chop the broccoli and add. Change the setting to low heat, and cook for an additional 25-30 minutes.
- Grate the cheese, and add slowly (a small handful at a time). Ensure to stir well so that the cheese melts and blends well.
- Add all spices to taste, including the salt and pepper.
That's all, folks!
Although somewhat time consuming, Broccoli and Cheese Soup will fill the home with a pleasant aroma. It is simple to make and soothing to eat.
As previously stated, this recipe will yield approximately 8 servings. To make 4 servings, simply use half of the measurements above.
Soup will last for a few days in the refrigerator, and can be frozen for later consumption.
Sprinkle a bit of grated cheddar cheese on top of the soup when serving, or a few bread crumbs or crackers, and enjoy!

this sounds similar to mine except i don't use nutmeg and i add red potatoes and onions. I'll have ot try it with the nutmeg
